Kuih Rose - sharing of recipes

One of the most endearing things girl friends do together is to learn how to make a cake or cook a special dish. When I was a teenager I was not into cooking. I was more an outdoor girl and enjoyed swimming and hiking. I took my bicycle every where if possible and would climb a hill with any one. Once I even accepted a challenge to swim across the Rajang river from one point in Upper Lanang and for that I got a beating from dad...my one and only time. I did not know that I could have lost my life or a crocodile would have carried me away. But I think my father was thinking that it was really not a girl and boy thing to do together. But I was always trying to prove that I was a boy and not a girl. Well when I had to wear a bra later I had to accept the fact that I could not be a boy ever...

So when the secondary school I went to gave Home Science as a subject I had to do cookery and not woodwork. But if given a choice I would have  chosen woodwork and become a carpenter. Perhaps at that age I was just too tired of being side lined as a girl. But then slowly I had to adapt like any other girl.

so as a girl I had to learn how to cook. And slowly I enjoyed collecting recipes too. That's how cooking came into my life and I have been on the look out for new recipes and sharing recipes with others. It was not really that easy to collect recipes and write them down in an exercise book in those days. Because most housewives would not pass their secret recipes to any one!! It is still true today.

So if we receive a recipe from a friend it is a real gesture of friendship.


And now for today's post I must say that I am very grateful to my Iban friend who shared with me her Kuih Rose recipe. Many people have kept their family recipes secret but not my friend Jati. A teacher by profession and a relative I really appreciate her kindness and together we made one huge tin of Kuih Rose for some friends to try.

Relatives usually gather together to make this kuih in the longhouse before Gawai or Christmas and it is often during this kind of gathering that one can share loads of old wives' tales and wisdom with each other. Perhaps a young lady could even find the solution to her problems when she listens carefully.


Here is the recipe :

Makes about 18 or 20 pieces or more if your mould is small. You can get the moulds from any cake ingredient supply shop or one of those old sundry shops.

Ingredients :
1 Grade B egg
2 tablespoons sugar or less
100 ml coconut milk (fresh if possible)
60 gm plain flour (sifted)
25 g rice flour(dried in the hot sun for 10 minutes and sifted)
1 tsp water
1/2  tsp kapur (from the tamu)- this is the little qq of the recipe to make the kuih crunchy

Method : 
1. Mix all the ingredients together.and rest the batter in the fridge for a short while
2. Heat kuali and add enough oil for deep frying.
3. Place the mould in the hot oil
4. Deep the hot mould into the batter but do not allow the batter to overflow to the top of the mould.
5. Place the mould coated with batter into the hot oil and allow the batter to cook until a lidi(coconut satay stick) could take the crispy batter out of the mould
6. Place the mould back into the hold oil.
7. Repeat process. The kuih rose should be floating nicely and become golden in colour. 
8. Remove the kuih and leave to cool.

I hated this, my mum never made it. Catherine's mum and another aunty made them and swap for my mum's butter cake.

Hi Ann
My mum is not a "Kuih" maker not those dainty ones..so I try my best to make up..but then my Auckland sis is the best in everything.. Kuih Rose is something I can make..but not often. But I am glad that I did learn from a friend and it was a good experience. Perhaps that is why I am quite ready to teach others how to cook!!

Me? if I make things, my WAI Po says, i was born a man, fast hand and Fast leg. can't make dainty things.

It is true Ann...some people are just good with their hands to make dainty cakes...some men are also fantastically handy in the kitchen...I don't mind doing a turkey or a big chicken..but I won't spend time doing all those little pies...unless I have helpers..
