Satar

Do you have some ikan tenggiri or mackerel? If you have 1/2 kg of its flesh you can make some Satar for your family.

Here's the recipe for 5 person.

500 gm tenggiri flesh (or any other meaty fish if you prefer)
100 g asam jawa liquid
l inch ginger (finely pounded)
3 red onions, finely sliced.
l clove garlic, finely chopped
2 tbs grated coconut
some salt to taste
some sugar
Sarawak white pepper
some chopped chillies
l  tumeric leaf - chopped very fine
square pieces of banana leaves about 5 inches (about 20)
5-6 sticks of lidi (you can make this yourself from bamboo or coconut fronds)

Method

1. steam the fish . When cooked add all the rest of the ingredients.
2. mix well.
3. wrap the mixture hbanana leaves. Form cones.
4. Push bamboo sticks through the satar, three on each stick.
5. Cook over charcoal fire like you do satay.

(If you wish to use less of the fish, add some toufoo or even chicken. Your mixture should be more or less the texture of home made fish balls)
