Sarawakian Local Delights ; Mixed Farm Vegetables and Bunga Kechala Salad.

A very good and easy salad to prepare in the longhouse is a mixture of several farm vegetables.
A few longbeans, some angled wing beans,cucumber,spring onions, onions, garlic, cabbage and three or four young bunga kechala. Slice all the vegetables finely like in the photo. You can always adjust the vegetables you prefer. With one whole head of cabbage you can even make one whole basin of salad.

A simple dressing can be made from one cup of pounded fried peanuts (or use peanut butter), lime juices from about 10-20 limes,some vinegar and some sugar. Add a bit of Thai fish sauce. If you like you can add some Thai chilli sauce.

Add salt and pepper to the salad.

This salad has been introduced to some hotel restaurants in recent years.
