Ann...this is a Foochow restaurant (which is halal) and they use fresh oysters - really big ones..this piece cost almost RM

The mother of the chef is my second sister's friend...so you know with the Foochow connection we get good treatment and we get good treats too. Will let you know the name of the outlet in message.

Oysters pancake is popular in most places now in Asia..this is a big one..Normally oh chien is not crispy..this chef is clever!!

At this outlet you can ask for either the crispy one or the soft one.

any idea how they did the crispy one like the shape of the wok?

I do not think the outlet would divulge its trade secret but it is definitely a mixture of some rice flour and flour with some eggs (like crispy dosai)..the shape is from the small wok they use..Oysters are all at the bottome of the wok...trial and error may help you get the whole pancake done!!
