Hainanese Chicken Rice Recipe - Garnish with cucumber and cilantro

Hailam or Hainanese Chicken rice is not originally from Hainan Island It was adapted from the Wenchang Chicken recipe of Southern China.

the WEnchang chicken is a special breed of chicken, which was popular even duing the Qin dynasty.

An article from San Francisco Chronicle stated,"the dish maps 150 years’ immigration from China’s Hainan Island...to Singapore and Malaysia, where the dish is often known as Hainan chicken rice; to Vietnam, where it is called “Hai Nam chicken”; and to Thailand, where it has been renamed “khao man gai” (“fatty rice chicken”)."

In Miri, the best chicken rice is from two Hainanese coffee shops. One can tell the difference in the cooking of chicken and the
 special flavour of the oily and pale yellow rice.

Today many different ethnic groups can actually prepare chicken rice but the best rice is still from Hainanese coffee shop owners. 
Their dipping sauce makes a great difference.
