Angchow Pork - Red Wine Lees Pork


One of the best delicacies from the Foochow community is the angchow pork. It is preferable to have a bit of pork skin with the pork as the skin would enhance the flavour and taste of the final outcome.

The sugar added to the cooking would help to caramelize the sauce thus making it a very welcome dish for children.

Whenever my siblings and I visited our grandmother in Nang Chong, my mum would buy a big piece of pork for us to bring as a gift to our cousins and grandma.

Whenever we shared this dish at the dinner table all my cousins would very happy and we would have more bowls of rice!!

And most interestingly, my grandma would pick the pork skin to go with her rice. She said the pork skin cooked in this sauce was very sweet. She was actually eating a lot of collagen!! No wonder she had such a good skin.

It is a dish which makes every Foochow granmother proud. Grandmother's Flavour!!
