Rabbit Recipes

Rabbit can be cooked in many different ways.

Smoked Rabbit is traditionally a Fujian recipe and when I visited Fujian  recently we were shown some cooking styles and great dishes.No photo description available.

According to our Foochow friends in China, when Emperors came to Fujian (and of course Fuzhou City), most of them were impressed by the Rice Smoked Rabbit served. Today it is still a banquet dish for VVVVIPs. 

My grandmother and uncles used to tell us that it was very easy to trap or shoot wild rabbits in the hills. There were pests any way. So our Foochow elders actually ate a lot of wild rabbits. There are few breeds of Chinese Rabbits as opposed to European rabbits (scientifically). 

Although smoking the rabbit seemed easy, the process was quite complicated. We looked through the glass partition while the chefs were busy cooking. It was not easy to see everything.

However, only processed slices of the meat were served. Thus some people would not even know that it is smoked rabbit, until the chewing stage (if not informed). So this is our grand parents' selected dish in the olden days : rice smoked rabbit. 

Fujian smoked rabbit is also a gift tourists can buy in special shops and at the Changle International Airport.
