Make your own coconut oil
during the Japanese Occupation most Foochow families did not have a chance to buy imported cooking oil so they depended on themselves, to make some coconut oil.
My uncles would look around for old coconuts and started to cut them into two and scrape out the hard flesh which they grated with an old scrapper.
After getting the scrapping done, they would squeeze out the coconut milk. The coconut milk would then be diluted with cold water, which they would leave overight. The next day, the pure oil would be floating on the water. this solid would be boiled again and the final oil collected for cooking.
Good coconut oil is very fragrant and only a little bit is needed to stir vegetables. Today our home made coconut oil can be infused with other oils to make good massage oils.
