Sibu Tales : Almond Jelly
Ingredients: 1 cup almond milk
1 cup warm water
1 cup unsweetened soy milk
4 g agar agar strips
1 cup water
l tbs sugar
(sweet scented osmanthus = l tbs sweet scented osmanthus, 1 tbs warm water)
Prepare the agar agar water 10 minutes. Transfer the soaked agar agar in pot, add water and sugar, heat to dissolve. Add almond milk,soy milk,sugar, and warm water. Cool. Garnish.
Almond jelly is a favourit Foochow banquet dessert. Often added to slices of peach, apricot and lychees.
As children, we would always look forward to this dessert at the end of the banquet. Even the ice cubes were awesome!
My ninth aunt is named after this flower. It is very fragrant and is often used as a fragrant tea in Fujian. It is often used to flavour cakes and biscuits. Osmanthus sugar can be purchased in Chinese medicine shop.
the flowers can also be infused in rice wine, to make it a flavoured Gui Hua Jiu.
