Sarawakian Local Delights : Wild Boar,Bamboo Shoot Curry
When wild boar is cooked with curry, it is very tasty and aromatic. Bamboo shoot can be added to give it a special pungent flavour.
The curry paste can be made from curry powder, curry leaves, curry seeds, red chilli padi. Or one can made from a choice of the following, coriander powder, cumin powder, chilli powder , tumeric powder and pepper, if fresh curry paste cannot be obtained.
Bamboo shoots are in season in the middle of the year in Sarawak.
This curry is not a thick curry.
NOTE : It can also be a sour curry if some tomatoes and terong are added to bring up the sour taste.
