Sarawakian Local Delights : Mock Pansuh Ayam

Chicken baked with lemon grass and some wild torch ginger shoots tastes extremely wholesome and refreshing. In fact it tastes almost like chicken cooked in bamboo.

There are many different kinds of bamboo available in Sarawak. But to make the best kind of chicken cooked in bamboo, one has to find the wider bamboo called ruas. The slimmer stemmed bamboos are good for cooking of glutinous rice or lemang.

Bamboos are natural receptacles used for cooking in Asia and especially in Indonesia, Borneo, Brunei and Malay Peninsular.

Meats and rice are cooked in bamboo stems by minorities like the Dai, Hani, Lahu, Bulang, Jinua and Jingpo people in the Yunnan Province. the Zhuang minority and the Yao Minority in Guangxi also cook food using bamboo stems. Most of the indigenous people of Sabah and Sarawak cook their traditional dishes like rice and meat in bamboo.
