Sarawakian Local Delights : Tamarind Pork


A friend who used to live in Brunei moved to the UK. She is a very good cook and offers many good recipes in her blog. I copied her recipe for tamarind pork . It is really good.

Tamarind or assam jawa is a good ingredient to use.  If only we can get fresh tamarind pods in Sarawak easily.

600g belly pork, cut into thick strips

3 tbsp olive oil/any cooking oil of your choice.

2 tablespoons tamarind pulp, mixed with 2 cups water and squeezed to obtain tamarind juice

6 green chillies, slit to remove seeds

l tablespoon sugar or to taste

1 tsp dark soy sauce

1 tsp salt or to taste

2 tsp pepper

Ground ingredients (Combined)

8 shallots

4 cloves garlic

2 tbsp coriander powder

2 tbsp preserved soy bean paste

2 stalks lemon grass (optional)

Method
Heat oil in a wok and sauté ground ingredients until fragrant. Add sliced pork and fry until pieces are well coated with spices. Add dark soy sauce, sugar, salt, pepper and tamarind juice and chillies. Bring to a boil, then reduce heat and simmer until pork is tender. When cooking, add a little more water if gravy is too thick.
