Loti is the way Foochows call bread. It is a corruption of the word Roti. Chiek means cuts or cut offs.
Thus the off cuts of biscuits and bread were called Loti Chiek by our pioneering Foochow fathers.
They were baked and packed in plastic bags to be sold at a low price.
They are also very important ingredients for the making of some Foochow delicacies like Char Gor, Man Chew Gor and even yam rings. But not many of the younger generation of Foochows know about this term, let alone how to use them in cooking.
In recent years, they are also used in the making of nice bread puddings by some innovative chefs.
