Sibu Tales : Poached Egg



A poached egg is an egg (without the shell) cooked by poaching or sometimes steaming. The water should be only gently boiling.

This makes the egg yolk very delicate and the white very fine compared to an egg which is boiled.

The simple village Foochow people would poach an egg to be served with a bowl of noodle for any visitor who happened to drop by. This extra feature in a soup was an act of hospitality when nothing much could be offered.

A more senior member of the family who was visiting would be served a soup made from freshly slaughtered chicken and noodles.

When a girl had her first menses, her observant mother or grandmother would poach an egg in hot red rice wine. This was believed to help warm up her insides and she would not have any pains from her periods.

A poor mother would make a poached egg for each of her children on their birthday. The Foochows would say, "Cross the Birthday".
