How to process a freshly harvest bamboo shoot (Rebung Manis/Betong or in Foochow Moo Tong Soon)


Bamboo shoots must be processed fast. A parang is the best implement to use. First cut off the hard skins.


When you reach the inner bit, be gentle with the flesh so that you don't slice off too much.


Cut the bamboo shoot into two and you get a longitudinal section like this.

you can boil the big chunks to get rid of the bitterness or you can just shred the bamboo shoot into small slices and boil.

If you like the fermented bamboo shoots, you can soak the shredded pieces in water for one or two days. Sour or fermented bamboo shoots are good as stir fries or bamboo shoot pickles.
