Miri Stories : Pig Trotters in Black Vinegar

猪脚醋”- "Tu Kar Chor" in Hokkien or "Chu Kiok Chou" in Cantonese are one famous dish in Chinese community. It is a popular dish cooked by many women in Miri.

Furthermore it is probably the most famous Chinese Confinement dish in Malaysia. My friends in West Malaysia love to cook it for their daughters in law during their confinements. This dish is not eaten by Foochows during their confinements.

The trotters cooked this way become sweet, sour and spicy and the skin spongy and delicious. And it is supposed to get rid of headaches too.

There are several important ingredients for this dish. Firstly, the black vinegar used is known to help purify blood, and the old ginger can drive out wind and in the same way. Secondly, the brown sugar will counter act the dampness in the dish. Besides the trotters also provides good nutrition and give support to joint health.
