Sibu Tales : Big Intestines

We had a great neighbour who was a good cook and one of the dishes she prepared quite often was the glutinous rice stuffed pig's intestine.  This dish was always a favourite for her family and my family. We got along very well and very quickly we had to move away because of a transfer. It was sad to leave the family behind. My children asked why they could not move with us.

As our transfer out of Sibu was quite sudden I did not have the time to learn how to cook many of her dishes.

Now I have to depend on Google for some recipes. But I never did get around to make the stuffed big intestines like her.
Chinese Glutinous Rice Sausage (糯米肠)

The stuffing is made from ground meat, shrimp, red onions,soy sauce, red wine, and salt. The long glutinous rice has to be soaked overnight to be mixed with the freshly made stuffing. Once well mixed the stuffing will be poured into the processed big intestine which forms the casing for this Chinese sausage.

She uses a small funnel to push the glutinous rice into the casing. It is very hard work but Mrs. Wee is really patient.

Once the intestine is filled up, it is can be tied by string at 10 to0 15 cm intervals and then steamed .
