Crabs and Tern Hoon
冬粉 mung bean vermicelli or tang hoon or in Foochow tern hoon is quite a favourite ingredient for many families.
Many of us , not allergic to crabs or sea food would cook a good festive dish with tern hoon.
This dish is quite tricky but we have a short cut. First the tern hoon is blanched until it is very soft and placed on a plate. then the fresh crabs are steamed with all the suitable ingredients and seasoning on top of the tern hoon. The tasty crab juices will season the noodle base. A deeper bowl for steaming can allow extra "sauce" for the tern hoon.
Serve immediately.
for the frugal Foochow housewife, this is a good dish because the adults can enjoy the crabs, and the children can have the tasty tern hoon with more sauce.
sometimes black beans can be used to season the crabs.
