Tou Cheong Steamed Fish
One of the favourite fish dishes of the Foochows is The Tou Cheong Steamed fish. You don't really need a very big fish to do this style.
It was one of my mother's favourite dishes. Actually, tou cheong being very cheap was a common food enhancer for many families.
My mother cooked kang kong, bean curd, bitter cucumber , pork, chicken with tou cheong. almost everything! But we were good children because we never complained about our food. We were grateful we could fill our stomachs.
And the sauce would just freshen up our white rice. sometimes a good meal is just the left over sauce and the rice and an "empty" soup.
Empty soup means a soup with all the goodies gone.
